Sides: Tostones & Mofongo

Tostones are a common side dish. These flattened, fried green plantains are delicious alongside a savory meal. To complement their mild flavor, tostones are often seasoned with salt.

L. Albert's annotations include her version of garlic-infused olive oil which she spoons over tostones or mixes into another Puerto Rican side dish: mofongo. 

Don't let the name throw you off: mofongo is simply lightly mashed tostones that are mixed with seasoning and re-formed into small bowls (with indents in the center) or balls. Both versions are often filled with vegetables or meat.
