1/4 cup olive oil
1 medium onion, chopped
3 cloves garlic, diced
1/4 tsp crushed red pepper, optional
1 1/2 tsp dried oregano
1 cup vodka
2 (28 oz.) cans San Marzana whole
tomatoes, drained
Kosher salt
Black pepper
Penne pasta
1 cup Heavy cream
1/2 cup Parmesan

Preheat oven 375°F
1) Heat olive oil in large pot over medium heat,
Add onions, garlic, cook 5 min. Add red
pepper, dried oregano, cook 1 min. Add vodka
cook until reduced by half.
2) Crush tomatoes with hands into pot. Add 2
tsp. salt and pinch of pepper. Cover pan with
lid and place in oven 1 1/2 hours. Remove pan
from oven, cool 15 minutes.
3) Place tomato mixture in a blender, puree
in batch until smooth. Hold towel over top
of blender lid while pureeing. Return
puree to pan.
4) Heat sauce, add oregano, cream, salt and
pepper, simmer 10 minutes.
