2 cucharadas de sal para agua
1/2 litro de agua
3 dientes de ajos

Mofongo
• 3 plátanos verdes ½ libra de chicharrón o tocineta
• 3 dientes de ajos 1 cucharada de aceite de oliva
• ½ litro de agua 2 cucharadas de sal para el agua
1. Monde los plátanos y córtelos en tajadas de aproximadamente 1 pulgada de ancho.
2. Remójelos en 4 tazas de agua con 2 cucharadas de sal durante unos 10 minutos. Escúrralos.
3. Caliente abundante aceite vegetal.
4. Añada las tajadas de plátano y fría lentamente a temperatura moderada por unos 15 minutos, hasta que se cuezan, sin llegar a tostarse.
5. Sáquelas y escúrralas.
6. En un mortero, muela bien los ajos y mézclelos con el aceite de oliva.
7. Sáquelos del mortero.
8. Muela en el mortero 3 tajadas de plátano frito.
9. Añada un poco de chicharrón o tocineta y muélalos.
10. Agrégueles parte del ajo con aceite y mezcle. Forme bolas y sirva caliente.

English Translation:

Mofongo
2 or 3 big green plantains ½ lb. pork rind or bacon
3 cloves of garlic 1 tablespoon olive oil
½ quart of water w/ 2 tablespoon salt 1cup vegetable oil

1. Peel the plantains, cut them
2. Soak them in the water with salt for 10 minutes; place on absorbent paper.
3. Heat vegetable oil
4. Fry the pieces of plantains for about 15 minutes or until they are until they are cooked but not toasted.
5. Take them out of the pan and place over absorbent paper.
6. In a mortar or small bowl, place the garlic and crush, add olive oil.
7. Take them out of the mortar or bowl.
8. Crush in the mortar o bowl 3 of the plantain pieces.
9. Add a little of the bacon or pork rind and crush all together
10. Add some of the mixture of garlic and oil. With your hands, form balls and serve hot.
